The History of Caesar Salad You Probably Didn’t Know

A Mexican Beginning

Despite the Italian name, Caesar salad was actually invented in Tijuana, Mexico, in the 1920s. Caesar Cardini, an Italian immigrant and restaurateur, was running low on ingredients during a busy Fourth of July weekend. Instead of sending customers away, he improvised using what he had on hand: romaine lettuce, garlic, olive oil, croutons, Parmesan cheese, eggs, and Worcestershire sauce. The result was an instant hit, and the famous Caesar salad was born.

From Tijuana to the World

The salad’s popularity spread quickly. American celebrities visiting Tijuana fell in love with it and brought the idea back to the United States. By the 1940s, Caesar salad had crossed the border and appeared on menus in New York and other major cities. Restaurants began experimenting with the recipe, adding anchovies to the dressing and serving it in fancier presentations. Today, it’s one of the most recognizable salads in the world, served from casual diners all the way to fine dining establishments!
